A birthday dinner has a different job from a good dinner. It has to feel like an occasion from the moment you walk in, and it has to work for however many people you have talked into coming.

These are the New York rooms that have done it for me. What they share is that something happens at the table — a flame, a view, a room that makes everyone sit up slightly straighter.

The room does the work. You could serve anything in it.

High ceilings, columns, white cloths and enough space between tables that a group of six is not an imposition. This is the one I book when the point is the occasion rather than the food.

The theatre is the entire reason to go on a birthday. A copper pan, a blue flame, and a moment where the whole table stops talking.

Worth the premium exactly once a year. Ask for a corner table when you book and again when you arrive, politely, both times.

Sit at the counter and let someone else run the evening.

For a birthday of two or three, a counter beats a table. You are fed in sequence, you talk to the person cooking, and nobody has to choose.

Best for: Two or three people
When to go: Early sittings are easier to get

Booking a birthday in New York

Say it is a birthday in the reservation note, not on the night. Restaurants can do something about it with three weeks of warning and almost nothing about it at the table.

Three to four weeks for the grand rooms, longer around the holidays. For a table of more than six, call rather than book online — the online systems almost always say no when a phone call says yes.

What I have stopped doing

Booking the newest opening. A restaurant that opened six weeks ago is still learning how to run a room, and a birthday is the wrong night to find that out.

Booking somewhere loud. Every birthday dinner I remember fondly is one where the table could hear each other.
